Zucchini Bread


It’s a good year for zucchini!  Come get some and try this fantastic bread recipe.  1 large zucchini will be plenty.

  • 3 eggs, lightly beaten
  • 1/2 c. sugar
  • 2 tsp. vanilla
  • 1 c. oil
  • 1 tsp cinnamon
  • 3 c. grated zucchini
  • 1 c. raisins or walnuts
  • 3 c. flour
  • 1 tsp. baking powder
  • 1 tsp. soda

Combine eggs, sugar, vanilla, oil and cinnamon.  Mix in squash and raisins or nuts.  Combine and add remaining ingredients and mix.  Bake in 2 9×5 loaf pans at 350 for 1 hour or more till done.  Freezes well!  You can fit 2 loaves horizontally in a gallon size freezer bag.  Enjoy it all winter long!
